Is there an NES equivalent to the Atari Synthcart I should get?
I've only ever used Gameboys and Atari 2600 for music.

Why google stuff when you can let others do it for you? Outsourcing for the winz.
Midines
A great "mod" is to refurbish the edge connector.
Maybe a second audio out jack
Graphical mods of any hardware is really trivial in that it's fucking useless.
Get a Powerpak and/or MIDINES and/or Chip Maestro and get to actual compose music for or with the NES.

Look into software like NTRQ, Pulse8 and whatever else Neil has been dishing out for the NES. Put that on your Powerpak and get tracking or get into Famitracker and make some NSFs and load 'em on.

Has anyone tried Chip Maestro with a microKORG XL? I think it's the only thing I have that can serve as a MIDI controller. It just looks a lot more fun than using a tracker, ahaha.

Chip Maestro looks very cool, but it's just now getting into backer's hands. Still a bit of a wait for general sales.As to your KORG, well should work. Simple midi implementation, NoteOn NoteOff and some CC I think.
Hopeful, more features will be added over time. Would like to see more automation in the waveform handling, Arp and echo type things handled by the AVR. Thats where a tracker shines!

I'll be patient. It seems I'd have to wait for a copy of NESK-1 as well anyways, ahaha
