i dont even know where to start... what kind of trackers aside from emulation of native console roms and image editing can i do???

Depends what OS you will be putting on it. You'll most likely be going with Raspbian, so go look around in their repos.
It'll be the typical stuff: milkytracker, schismtracker, etc
