Of course. You can use 1x or 2x pokeys. You just set up your module at beginning as MONO or STEREO.
If you set up MONO it will plays all 4 channels to both earphones...
Well but lot of people mainly from demoscene have StereoPokeyPCBs.
It is standard. Lot of new games and demos have stereo tunes.

Yes of course.
Here is full documentation for STEREO POKEY PCB (2x4channels= 8 stereo channels).

But you can do tunes on RMT tracker on your notebook anywhere and
than export tune as XEX and save sound WAV in emulator 16bit 44KHz (Atari800 WinPlus).
