Yes of course.
Here is full documentation for STEREO POKEY PCB (2x4channels= 8 stereo channels).
http://raster.infos.cz/atari/hw/stereo/stereoen.htm

But you can do tunes on RMT tracker on your notebook anywhere and
than export tune as XEX and save sound WAV in emulator 16bit 44KHz (Atari800 WinPlus).
http://a800win.atari-area.prv.pl/

But I recommend real Atari stereo pokey upgrade and SDRIVE (sd-card drive).

If you have any question let me know smile).
And here is huge ATARI POKEY music database:

Can you use only one pokey with this tracker?
Let me rephrase: can you export music that can be played back in a 1 POKEY Atari?

Of course. You can use 1x or 2x pokeys. You just set up your module at beginning as MONO or STEREO.
If you set up MONO it will plays all 4 channels to both earphones...
Well but lot of people mainly from demoscene have StereoPokeyPCBs.
It is standard. Lot of new games and demos have stereo tunes.
2009 demo for example The Shrine...

So build your own upgrade or maybe try to ask some 800 sceners for upgrade on Atariage.Com or http://www.atari8.info/index.php?lang=en

In your opinion what is better?  Theta Music Composer or Black Magic Composer?  I've been considering getting into POKEY music and I'm curious.  Do you know of any special tricks to overcome the POKEY's detuning?

I suppose Tinctu is related to the development of RMT and will  recommend RMT, none of those two you mention, man tongue

Yes best trackers on real A800 hw are ->

TMC Tracker (PSG)
http://grayscale.scene.pl/download/thetamc.zip

And MPT Tracker (PSG plus SAMPLES)
http://grayscale.scene.pl/download/mpt24s.zip

But true I am specialised on RMT Tracker.
I am not developer. Just musician.
RMT Tracker supports MIDI for input notes
and runs on PC with Windows.
