I work just like Victory Road except I have a system for naming my instruments because that saves me the time of trying to remember which instrument is a copy-pasted version of instrument 2 except quieter/with a different envelope, etc.
The thing about being super organized about the way you write is that when you're making more complex tracks you end up eventually breaking your system anyways so there's not much reason to make one in the first place, from my experience. Embrace the chaos!

The DS also has Nitrotracker which is basically a port of the great DOS tracker Fasttracker II.
Like yogi, I also recommend trying out some PC trackers first before you go out and buy a flash cartridge if you plan to do more than just Gameboy music with LSDJ because compared to other trackers, LSDJ is kinda weird and I think it's much easier to learn it after already becoming familiar with the tracker interface, but that's just me.

From what I know most people that aren't playing an instrument live have some sort of Kaoss Pad or DJ mixer kind of thing that they use to add some effects on top of their song, but it's still mostly "press play and dance". If you've got enough personality onstage and your music is good enough it's totally possible to get away with that though.
