Use whatever you think will make it sound like you want it to. LSDJ obviously will never be all that live because it only has 8 buttons to work with and you can't change many parameters at the same time. You can play LSDJ in live mode and sequence things in a different order to "remix" but if you want more control, find some different hardware... especially for dubstep.

Arduinoboy adds midi to the gameboy and mGB lets you access all the gameboy channels on different midi channels. You can also set mGB to play PU1 PU2 and Wav in a polyphonic mode on 1 midi channel so you get 3 note polyphony.

I've actually played around with the Rockband keytar and it works pretty great as a midi controller for the price.
