I look at it this way. If I've already composed the song exactly how I want it to be heard, and done as good of a job as I can, then why would I want to alter it on stage and put the performance at risk?
Now if you're looking for something to do on stage, you could work in external effects and manage those while your song plays. Or you could play around with the transpose function and tempo in LSDJ. You can also just dance. 
On a side note, I do usually switch to live mode to help with transitioning between songs. And like Dire Hit said, playing new or unreleased material keeps the show fresh too.

2. Sometimes yes, most of the time no. I pick a vibe I'm going for before I start writing, and work/add on to songs over a longer period of time. I give my self a lot of time to go back over songs and perfect them to my taste.

You can make a "yeeaauuhhh" sound in the wav channel and use different frames of that synth

What really grinds my gears is when people paint a gameboy white, put PIL buttons/screen in it and try to sell it as an actual white PIL.
