I think it should work - the official nintendo cables / adapters have all the pins present afaik.

Yes, that's what I mean - vacuum metal plating. What kind of "chipping issues"?
edit: I guess I know what you mean now. Wouldn't coating it in acrylic or something like that help? Or better quality plating? This technology IS actually used for stuff like this.

This must be the only music-related forum on the internet where people actually like Behringer stuff.
I'm using Roland MX-5. It has 4 stereo channels, TRS and RCA input, AUX in, L/R panning, 9V battery or adapter operated, fader volume control. I really like it.
edit: you can find them pretty cheap - ebay purchuase history suggest price about $40-60. I got mine locally for around $30.

Only heavy duty drills for metal are made of cobalt afaik. You don't really need that.
edit: and Timbob is correct, 5.5mm or 6mm is fine for 3.5mm jack (you need to drill the outer diameter, not the inner 3.5mm)

I'm still not sure if you are using LSDJ master sync mode..? On your gameboy as well as arduinoboy. Midi out does not work for sync - only for sending midi notes.
